The Huntsman brought its wild-game fine dining concept, duck, wild boar, antelope, elk, bison and more, to Carillon Beach on 30A. The operator's site lists a regular Monday-through-Saturday happy hour and dinner schedule with a late-night menu on weekends. It seats about 210 including the patio, with private dining available.
